The pistachio ( pih-STAH-shee-oh, -STASH-; Pistacia vera), a member of the cashew family, is a small to medium-sized tree originating in Persia. The tree produces seeds that are widely consumed as food. In 2022, world production of pistachios was one million tonnes, with the United States, Iran, and Turkey combined accounting for 88% of the total.
